The Gorkhi Terelj National Park is the most popular destination to visit outside of Ulaanbaatar being just 70 kms North East of the city - so about 1 hours drive. The scenery here is mountainous and the area is often referred to as the "Mongolian Alps." In Terelj you can experience overnight ger stays and some of the most comfortable in Mongolia are here. You can learn about Nomads and ride horses and camels. The hiking is excellent and it is possible to rock climb on the unusual rock formations.
